  • 1 cup oat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup of plant-based milk (almond, soy, oat, etc.)
  • 2 tablespoons maple syrup or honey
  • 1 tablespoon coconut oil

Preparation

  1. In a bowl, mix the oat flour, baking powder, salt and plant protein.
  2. Add the plant-based milk, maple syrup or honey and olive oil. Mix well until you have a smooth paste.
  3. Heat a non-stick skillet over medium heat and pour a small ladleful of batter to form each crepe.
  4. Cook until bubbles form on the surface, then flip the pancakes and cook on the other side.
  5. Serve pancakes warm with fresh fruit and a drizzle of maple syrup for a protein-packed breakfast or snack.
